Made with creamy butter and smoky, aromatic spices; these potatoes and onions make for the most incredibly flavorful side dish.

INGREDIENTS

  • 12-15 whole white potatoes (cut into cubes)
  • 1 sweet onion (sliced)
  • 1/2 stick unsalted butter
  • Old Bay seasoning
  • Cajun seasoning
  • Black pepper
  • Cayenne pepper 
  • Onion powder 
  • Garlic powder
  • Oregano (dried)
  • Water (or chicken broth)
  • Salt (to taste)
  • 1/4 tsp Paprika (optional)

DIRECTIONS

  1. Wash and peel your potatoes, cut them up into cubes. Cut your onions into slices.
  2. Toss your potatoes and onion into a cooking pot. Set your stove @ min. High heat.
  3. Add all of your ingredients into the pot. Add you water, but DO NOT COVER THE POTATOES WITH THE WATER. Just add enough to barely cover the potatoes.  You can substitute chicken broth in place of the water, this will give it great flavor as well.
  4. Boil your potatoes until they are fork tender... If you think you have too much water left after your potatoes are tender, simply pour some out. Now, use your spatula to break apart some potatoes.
  5. Taste to see if you need to add more salt...garnish with cajun seasoning and parsley.
