A calzone is a handheld pizza that originated in Naples, Italy. It's made by folding a circle of pizza dough over a filling and baking it until golden brown. Calzones are often served with marinara sauce for dipping.
INGREDIENTS
- 1 batch of pizza dough divided into 4 dough balls
- 8 slices prosciutto
- 2 cups ricotta, drained if necessary
- 4 ounces fresh mozzarella, sliced thin, and drained on paper towel
- 1 1/2 cup finely diced smoked ham
- freshly ground black pepper to taste
- cayenne to taste

- corn meal for the pan
- 2 cups marina sauce for dipping, optional
- 1 egg for egg wash
- Parmesan cheese for dusting tops
DIRECTIONS
- Form the dough into a flat circle
- Top with fillings
- Fold the dough in half over the filling to create a half-moon shape
- Crimp the dough to seal it shut
- Poke some holes in the top to release steam.
- Brush with egg wash
- Bake until golden brown
You have two options when baking this:
- Bake at 500F for 15 minutes.
- Bake at 400F for 25-30 minutes.
NOTES
- Before folding you can drizzle the top of the filling with a teaspoon of extra virgin olive oil for a nice touch.
- When you remove it from the oven you could brush it with some garlic butter.
- Rather than making the dough you could buy some at your local supermarket. A lot of bakeries carry ready-made pizza dough they store in a refrigerator. You can also find it in your dairy section. Pillsbury makes it in a can next to the Grand's biscuits.
