Shirataki are translucent, gelatinous Japanese noodles made from the corm of the konjac yam. They are part of traditional Japanese cuisine, but they are also are appreciated by people with allergies or intolerances to wheat, gluten or eggs, or by people on a diet because of their low caloric value.

I eat these myself a couple of times a week.  Now, I will tell you they aren't really 0 calories BUT they might as well be.  Depending on which kind they range from 5 to 20 calories per serving which typically is 10 to 40 calories for the entire package.

Make sure you rinse them off with cold water.  They will smell like heck if you don't.  Which is totally normal.  Use these noodles in any pasta dish you like.  It comes in several styles.  You can find them at Whole Foods via the links below.

How do I eat them?  Well...

  • 2 packages of noodles (take your pick)
  • 8oz chopped red onion
  • 8oz chopped tri colored peppers
  • 2 jalpenos
  • 2 diced (grilled) boneless skinless chicken breasts
  • A ton of 0 calorie seasoning.

If you're vegan or vegetarian just swap the chicken for your favorite flavored tofu.

This makes up enough for me to eat 5-6 servings over a couple of days.  Super low calorie as it all comes from the chicken breast which is a lean protein.  Perfect for dieting.

What's your reaction?
