Good and hearty country skillet.
INGREDIENTS
- 3/4 Bacon
- 4 Eggs
- 1 Red Potatoes Chopped/Quartered
- 1/2 Green Bell Pepper Chopped
- 1/4 Shredded Cheese
- Parsley to garnish
- Salt and Pepper to taste
INSTRUCTIONS
- Chop bacon into small pieces for frying. fry with olive oil over medium heat and remove from pan, leaving the bacon drippings in the pan.
- Add potatoes and green peppers to bacon grease and cook over medium high for 8 to 10 min or until potatoes are softened and golden brown. Remove contents and set aside for later assembly.
- Crack eggs directly onto the same skillet and cook for 3-5 minutes. Add salt and pepper to each egg, and return potato mixture to the skillet, arranging around the eggs until the skillet is well covered. Using a spatula, serve each person one egg along with potatoes/peppers. Enjoy!
