Country Breakfast Skillet
Good and hearty country skillet.

INGREDIENTS

  • 3/4 Bacon
  • 4 Eggs
  • 1 Red Potatoes Chopped/Quartered
  • 1/2 Green Bell Pepper Chopped
  • 1/4 Shredded Cheese
  • Parsley to garnish
  • Salt and Pepper to taste

INSTRUCTIONS

  1. Chop bacon into small pieces for frying. fry with olive oil over medium heat and remove from pan, leaving the bacon drippings in the pan.
  2. Add potatoes and green peppers to bacon grease and cook over medium high for 8 to 10 min or until potatoes are softened and golden brown. Remove contents and set aside for later assembly.
  3. Crack eggs directly onto the same skillet and cook for 3-5 minutes. Add salt and pepper to each egg, and return potato mixture to the skillet, arranging around the eggs until the skillet is well covered. Using a spatula, serve each person one egg along with potatoes/peppers. Enjoy!
