Succotash is a delicious dish with a very rich history. The earliest reference we found dates to the mid-1600's, but, as far as we can tell, another 200 years went by before an actual recipe was listed in a cookbook. Succotash is essentially a corn stew. Here is a summertime version using fresh corn and beans.
