This is a very simple way to make sweet potato bread. It is delicious by itself but like corn bread is even better with honey butter.
INGREDIENTS
- 1 large sweet potato
- 1 3/4 cups all purpose flour
- 1 ¼ cups granulated sugar
- 1/2 teaspoon nutmeg
- 1/3 cup water
- 1/3 cup vegetable oil
- 1 teaspoon cinnamon
- 2 large eggs
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ cup raisins (optional)
- ¼ cup pecan (optional)
- 3/4 teaspoon salt
DIRECTIONS
- Pre-heat oven to 350F.
- Peel and slice up the sweet potato.
- Cook the sweet potato until fork tender (about 20 minutes).
- Mash up the sweet potato.
- Add all of the rest of the ingredients.
- Mix everything together.
- Spray down the bread pan with non-stick spray.
- Pour the batter into the pan and put into the oven.
- Cook for about 45 minutes. Until your toothpick comes out clean.
- Let it rest for about 10 minutes before removing from the bread pan.
- Top with some honey butter for the best treat!
This is an almost identical recipe BUT it is cooked in a pie plate like you would cornbread. Cook time is slightly different.
INGREDIENTS
- 2 medium sweet potatoes
- 2 room temperature eggs
- 1/4 cup of evaporated milk
- 4 tbsps of butter
- 1 cup of sugar
- 3 tbsps of flour
- 1 or 2 tsps of vanilla extract
- Sprinkle of cinnamon
DIRECTIONS
- Bake sweet potatoes until soft on 350 degrees. (or boil like above)
- Mix all ingredients well and add to a buttered pie dish.
- Bake on 350 degrees for 35 to 40 minutes. Let cool and enjoy!
