Making eggplant bread with raisins and walnuts. Very simple and easy to follow recipe.

INGREDIENTS

  • 1 1/2 cups all purpose flour
  • 1/2 cup sugar 
  • 1 tsp cinnamon 
  • 1/2 tsp vanilla extract 
  • 1/2 cup raisins (optional)
  • 3/4 cup walnuts (optional)
  • 1 small eggplant 
  • 2 large eggs 
  • 1/2 tsp salt 
  • 1 tsp baking soda 
  • 1/3 cup water 
  • 1/3 cup vegetable oil 

DIRECTIONS

  1. Dice 1 eggplant into small pieces (2 cups) 
  2. Put eggplant and 1/3 cup water into blender and blend for about 5 seconds.  It should become all blended and liquidy.
  3. In a bowl mix together 1/2 cup sugar and 1/3 cup vegetable oil.  Mix it up.
  4. Add the eggplant and mix together.
  5. Add 2 eggs, lightly beaten and mix again.
  6. In another bowl whisk together 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.
  7. Add eggplant batter to your dry mixture and mix it all together.
  8. Add 1 tsp cinnamon and 1/2 tsp vanilla extract.  Mix it up.
  9. Add in 1/2 cup raisins and 3/4 cup walnuts (chopped).
  10. Give it all one final mix.
  11. Pour into prepared loaf pan.
  12. Bake at 350 degrees for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  13. Let it sit for about 10 minutes before transferring to a wire rack to cool before slicing.
