Making eggplant bread with raisins and walnuts. Very simple and easy to follow recipe.
INGREDIENTS
- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 cup raisins (optional)
- 3/4 cup walnuts (optional)
- 1 small eggplant
- 2 large eggs
- 1/2 tsp salt
- 1 tsp baking soda
- 1/3 cup water
- 1/3 cup vegetable oil
DIRECTIONS
- Dice 1 eggplant into small pieces (2 cups)
- Put eggplant and 1/3 cup water into blender and blend for about 5 seconds. It should become all blended and liquidy.
- In a bowl mix together 1/2 cup sugar and 1/3 cup vegetable oil. Mix it up.
- Add the eggplant and mix together.
- Add 2 eggs, lightly beaten and mix again.
- In another bowl whisk together 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.
- Add eggplant batter to your dry mixture and mix it all together.
- Add 1 tsp cinnamon and 1/2 tsp vanilla extract. Mix it up.
- Add in 1/2 cup raisins and 3/4 cup walnuts (chopped).
- Give it all one final mix.
- Pour into prepared loaf pan.
- Bake at 350 degrees for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Let it sit for about 10 minutes before transferring to a wire rack to cool before slicing.
