ORIGIN STORY

It was invented in Vancouver, Canada in the 1990s by Mary Loria. Loria, who was pregnant at the time, frequented Vancouver's Buckwheat Cafe. After inventing the drink, she began ordering the drink at other cafes and recommending it to others. The trend spread. Despite conceiving the drink herself, Loria does not know who created the name. The term "fog" refers to the steamed milk.

Variations of the London fog involve substituting the tea leaves and using milk alternatives. It is popular in the Pacific Northwest and on Canada's West Coast.

INGREDIENTS

  • 4 teaspoons Earl Grey tea or 2 tea bags
  • 1 teaspoon organic dried lavender
  • 1/3 cup boiling water
  • 1 teaspoon pure maple syrup
  • 1/2 cup whole milk
  • 1/4 cup cream
  • 1/8 tsp vanilla extract (optional)

DIRECTIONS

  1. Place Earl Grey tea and lavender in a tea strainer. Pour boiling water over tea. Let steep for 5 minutes. Remove tea leaves and add maple syrup.
  2. Heat milk and cream to 150 degrees F (65 C). Froth the milk/cream and pour over the tea. Enjoy!
