How to Make Scrumptious Nigerian Rock Buns
What is not to love about Nigerian Buns? Crunchy on the outside, fluffy and spongy on the inside. Buns is another popular snack in Nigeria, it is made with few ingredients and very easy to make too. You can make this recipe vegan or vegetarian friendly with few smart swaps.

INGREDIENTS

  • 4 cups all purpose flour
  • 1 1/4 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon (optional)
  • 1/4 cup granulated sugar or more if you desire
  • 4 tablespoons melted margarine or butter
  • 2 cold eggs
  • 3/4 cup cold milk or water
  • Veg oil for frying

DIRECTIONS

  1. Add all the dry ingredients into a bowl and mix to combine.
  2. Make a hole in the center and add the cold eggs, melted butter and half the milk. 
  3. Stir it all together to combine and form a thick stretchy batter, then add the remained of the milk to the flour in bits till you achieve the desired consistency. Do not overwork the batter.
  4. Place a shallow pan on medium heat, add vegetable oil and allow to heat up till hot (About 3 inches high)
  5. Drop little batter into the oil to test if it's hot enough for use. If the batter floats atop, then it's ready. 
  6. You can fry this in a deep fryer at 180C / 350F
  7. Carefully drop the batter in the hot oil in batches but don’t overcrowd the oil.
  8. Reduce the heat and fry the buns till golden brown and well done
  9. Repeat this process until you have exhausted the whole batter mix.

TIP

  • To kick it up a tad in flavor you could add in 1 teaspoon of vanilla when you add the rest of the wet ingredients.
