Crispy-edged potatoes, smoky bacon, and sweet onions come together in one easy skillet meal. Perfect for lunch, dinner, or a comforting side dish.
INGREDIENTS
- 18oz potatoes
- 8oz bacon
- 1/3 onion
- 4 cloves garlic
- A little chopped parsley
DIRECTIONS
- Bring a pot of water to a boil. Add the potatoes and 1/2 tsp salt, then cook for 5–6 minutes. Drain and let them cool.
- Heat a skillet over medium-low heat. Cook the bacon without oil until lightly browned, crispy around the edges, and the fat has rendered. Transfer to a plate.
- Increase to medium heat. Add the potatoes to the skillet, using the rendered bacon fat. Spread them into a single layer.
- Cook until the bottom is golden brown, then flip and cook until all sides are nicely browned.
- If needed, add a little oil. Add the onion and cook until slightly softened.
- Stir in the garlic and cooked bacon, and cook until fragrant.
- Season with 1/8 tsp salt and 1/4 tsp black pepper, then toss to combine.
- Add the chopped parsley (or your favorite herbs) and give everything a few quick tosses.
- Serve immediately.
