Golden Potatoes with Bacon
Crispy-edged potatoes, smoky bacon, and sweet onions come together in one easy skillet meal. Perfect for lunch, dinner, or a comforting side dish.

INGREDIENTS

  • 18oz potatoes
  • 8oz bacon
  • 1/3 onion
  • 4 cloves garlic
  • A little chopped parsley

DIRECTIONS

  1. Bring a pot of water to a boil. Add the potatoes and 1/2 tsp salt, then cook for 5–6 minutes. Drain and let them cool.
  2. Heat a skillet over medium-low heat. Cook the bacon without oil until lightly browned, crispy around the edges, and the fat has rendered. Transfer to a plate.
  3. Increase to medium heat. Add the potatoes to the skillet, using the rendered bacon fat. Spread them into a single layer.
  4. Cook until the bottom is golden brown, then flip and cook until all sides are nicely browned.
  5. If needed, add a little oil. Add the onion and cook until slightly softened.
  6. Stir in the garlic and cooked bacon, and cook until fragrant.
  7. Season with 1/8 tsp salt and 1/4 tsp black pepper, then toss to combine.
  8. Add the chopped parsley (or your favorite herbs) and give everything a few quick tosses.
  9. Serve immediately.
