Easy pumpkin cupcakes using a doctored spice cake mix recipe!

INGREDIENTS

  • 1 box of Betty Crocker Spice Cake Mix
  • 3 eggs
  • 1/2 cup oil
  • 1 15oz can of 100% pumpkin 
  • 1 tsp vanilla 

DIRECTIONS

  1. Pre-heat oven to 350F.
  2. Mix all ingredients together.
  3. Fill cupcake pans half full.
  4. Cook at 350 for 12 minutes or until done.
  5. Let cool then frost with easy pumpkin buttercream frosting found below.

TIPS

  • You can substitute the Spice Cake Mix for yellow or white cake mix and add 1 tsp ground cinnamon and 1/2 tsp pumpkin spice.
  • Piping tip used can be found on Amazon.

 

ICING INGREDIENTS

  • 1 cup unsalted butter (room temperature)
  • 1/2 cup pumpkin purée 
  • 1 tsp salt
  • 1 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon 
  • 6 cups confectioners sugar (pure cane)

(Optional: sprinkle a pinch of nutmeg on top after decorating cupcakes or cake)
