A southern staple. Collard is a group of certain loose-leafed cultivars of Brassica oleracea, the same species as many common vegetables including cabbage and broccoli. Collard is a member of the Viridis group of Brassica oleracea.
INGREDIENTS
- 5 - 7 Bunches of Collard Greens around 2 - 3 lbs.
- 2 cups Onion, diced
- 4 Garlic Cloves, minced
- 1 Green Pepper, diced (optional)
- 1 Sweet Bell Pepper, diced (optional)
- 1 tbsp Jalapeno Pepper, diced (optional)
- 2 lbs. Smoked Turkey Wings, Turkey Leg, Ham Hocks, or Shank
- 1 - 2 tbsp Cajun Seasoning (optional)
- 2 - 3 tsp Crushed Red Pepper
- 2 tsp Onion Powder
- 2 tsp Garlic Powder
- 4 cups chicken broth I used Better Than Bouillon with 4 cups of water
- 2 tbsp Distilled White Vinegar
- 2 tbsp Granulated Sugar for balance
- Salt and Pepper for taste
