These easy 3-ingredient chocolate meringue cookies are crisp on the outside, chewy inside, and made with egg whites, cocoa powder, and powdered sugar.
INGREDIENTS
- 1 cup powdered sugar
- ¼ cup unsweetened cocoa powder
- 2 large egg whites
DIRECTIONS
- Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the powdered sugar and cocoa powder until evenly combined.
- Add the egg whites and stir until the mixture is smooth and well blended.
- Drop spoonfuls of the batter onto the prepared baking sheet, leaving about 2 inches between each cookie, as they will spread slightly while baking.
- Bake for 12 minutes, or until the tops are set and lightly crackled.
- Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack to cool completely.
