Chocolate Cloud Meringues
These easy 3-ingredient chocolate meringue cookies are crisp on the outside, chewy inside, and made with egg whites, cocoa powder, and powdered sugar.

INGREDIENTS

  • 1 cup powdered sugar
  • ¼ cup unsweetened cocoa powder
  • 2 large egg whites

DIRECTIONS

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the powdered sugar and cocoa powder until evenly combined.
  3. Add the egg whites and stir until the mixture is smooth and well blended.
  4. Drop spoonfuls of the batter onto the prepared baking sheet, leaving about 2 inches between each cookie, as they will spread slightly while baking.
  5. Bake for 12 minutes, or until the tops are set and lightly crackled.
  6. Allow the cookies to cool on the baking sheet for several minutes before transferring them to a wire rack to cool completely.

TIPS

  • Sift the powdered sugar and cocoa powder if they're lumpy for an extra-smooth batter.
  • These cookies are naturally gluten-free (just verify your cocoa powder and powdered sugar are certified gluten-free if needed).
  • Store in an airtight container for up to 3 days for the best texture.
