This is an easy to follow Chicken Fried Rice Recipe. This easy Chicken Fried Rice is loaded Chicken and Veggies and only takes 20 minutes to make! A much better and healthier option than takeout!

INGREDIENTS

  • 2.5 - 3 cups Long Grain Rice (cooked and chilled the day before for best results)
  • 1.5 - 2 lbs Chicken (I used boneless skinless thighs) Breast will work also
  • 3 large Eggs, lightly scrambled
  • 3 tbsp Butter
  • 2 cups mixed frozen veggies, Corn, Peas, and Carrots
  • 1 small white onion, chopped or diced (optional)
  • 1 tbsp minced Garlic
  • 5 green Onions
  • 2 tsp Sesame Oil
  • 1 tbsp Oyster Sauce
  • 1/4 cup Soy Sauce (add more if needed) to taste
  • Salt and Pepper to taste
