Sweet Potato Pie Cheesecake
This will easily become a new family favorite for the holidays. The perfect combination of Sweet Potato and Cheesecake!

Cheesecake Filling Ingredients

  • 24 oz. of cream cheese
  • 3 eggs
  • 1/2 cup sugar
  • 1.5 tsp vanilla extract

Sweet Potato Topping Ingredients

  • 3 medium sweet potatoes (cooked until tender...about 2 cups)
  • 1 stick of salted butter
  • 1.5 cup of sugar
  • 2 tbs cinnamon seasoning
  • 2 eggs
  • 1/4 cup of evaporated milk
  • 2 tbs heavy cream
  • 2 tsp vanilla extract
  • 1/2 tsp lemon extract

DIRECTIONS (follow instructions in video)

  1. Pre-heat oven to 350
  2. Mix together cheesecake ingredients.  Pour into pie crust leaving some fo the end.
  3. Mix together sweet potato pie ingredients.  Pour on top of cheesecake.
  4. Drizzle remaining cheesecake on top and swirl.
  5. Bake at 350 degrees farenheit  for 40-45 mins
  6. Chill overnight

TIPS

  • If you dont 'have 8 hours to chill over night OR you can't wait to eat it.  You could put it in the freezer for 2 hours and then on the counter for 1 hour. Overnight is best though.
  • If you want to speed up the process you could always buy a can of Sweet Potato Puree either online or in your local grocery store. Fresh is best but if you need to save time then canned will be work just fine.  Typically found in the baking aisle of your grocery store. Make sure you have 2 cups worth.
  • You could "spice it up" and use 2 tbsp pumpkin pie spice. Like the seasoning she mentions; this has everything in it you would need for sweet potato and pumpkin pies.
  • You can buy a frozen pre-made pie crust or make your own.  Other options are buying a pre-made graham cracker crust or a box of graham cracker crumbs to make your own.
