Spotted dick is a traditional British steamed pudding, historically made with suet and dried fruit and often served with custard. Non-traditional variants include recipes that replace suet with other fats, or that include eggs to make something similar to a sponge pudding or cake.
INGREDIENTS
- 400g (14oz) Self raising flour
- 200g (7oz) Shredded suet - If you don’t have suet, lard or butter will work
- 100g (4oz) Caster sugar - Ordinary white granulated sugar will work too
- 100g (4oz) Sultanas or currants or raisins
- The zest of 1 lemon
- 300ml (11 floz) Milk
DIRECTIONS
- Grease a 600 ml (1 pint) pudding basin.
- Mix together the dry ingredients.
- Add the egg and milk to produce a smooth dropping consistency.
- Place the mixture into prepared pudding basin.
- Cover with pleated greaseproof paper and foil and steam for about 1½ hours.
- Turn out and serve hot with custard or syrup.
NOTES
- Raisins, sultanas and currants are all types of dried grapes. Raisins and sultanas are soft, sweet and juicy, while currants have an intense, sweet and tangy taste. Raisins are typically the largest of the three.
- If you don't already have self rising flour you can make your own.
