This is such an easy bread to make. Soft and sweet utilizing condensed milk and coconut.
INGREDIENTS
- 2 1/2 cups bread flour
- 1/3 cup condensed milk
- 1/4 cup milk powder
- 1/2 tablespoon yeast
- 1/2 teaspoon salt
- 47g unsalted butter or margarine
- 1 cup grated coconut
TIP: If you decide to use margarine do NOT add in the salt. Margarine already contains salt.
DIRECTIONS
- If you're using fresh coconut you'll want to grate that now and put it aside.
- Mix all of your dry ingredients (including the coconut) together and mix well.
- Add in your wet ingredients and mix well.
- Once mixed you will knead the dough on a floured surface for around 40 minutes until it is soft and stretchy.
- Now you can roll it out and make it fairly flat so you can "roll it up" into a cylinder shape that will fit nicely in your bread pan.
- Spray down or add melted butter to your bread pan.
- Put your dough roll into the bread pan and cover. Let it rise for 45 to 60 minutes. It should double in size.
- During this time you will pre-heat your oven to 400°F.
- Cook for 30-35 minutes at 400°. Test it to make sure it is cooked through.
- If it is done you can take it out of the oven and brush the top with some melted butter.
- Let it sit and cool down for 1.5-2 hours before removing from the pan and slicing it open. Preferably to room temperature. The sooner you cut it open it begins to release all the heat.
TIP: I tend to use a skewer to test and see if the bread is cooked through. It goes down far enough to check the middle. If it comes out clean you are good to go.
