Scottish Rumbledethumps
Rumbledethumps is a traditional dish from the Scottish Borders. The main ingredients are potato, cabbage and onion. Similar to Irish colcannon and English bubble and squeak, it is either served as an accompaniment to a main dish or as a main dish itself. Cooked leftovers from a roast meal can be used.

INGREDIENTS

  • 5 -6 good sized Russet potatoes
  • 3.5 tbsp Butter
  • 1 tbsp olive oil 
  • 2 Spring onions, sliced
  • 2 Good handfuls of grated cheese - I used mature Cheddar
  • Half a head of cabbage, shredded 
  • 7 oz Shredded ham - I used smoked ham hock 
  • 1 medium onion, chopped 

TIP:  For reference this is like making a hash into a casserole.  Often times people use leftovers from a holiday dinner and fry it up into a hash.  In this case you go one step further and throw that hash into a casserole dish, top with cheese and bake it.
