Quick Whoopie Pies with Peanut Butter Filling

Need a quick dessert but low on time. These Whoopie Pies are just the thing.

CAKE

  • 1 box Duncan Hines Moist Deluxe Devil’s Food Cake Mix
  • ¼ cup softened butter
  • 2 large eggs

FILLING

  • 1 tablespoon butter
  • ¼  cup peanut butter
  • 1 ¾  cup confectioners’ sugar
  • enough milk to make it spreadable (about ½  cup)

CAKE INSTRUCTIONS

  1. In a bowl, mix together cake mix and softened butter, then add the two eggs.
  2. Place on a greased cookie sheet, 1 inch apart in 1-inch balls.
  3. Bake at 350F, 7-9 minutes depending on your oven until tops crack.

FILLING INSTRUCTIONS

  1. Blend 1 tablespoon butter and peanut butter.
  2. Stir in confectioners’ sugar and add enough milk to make frosting soft enough to spread.
  3. Spread between the flat sides of two cookies and sandwich together.

 

You can pretty much make the cakes out of any brand and type boxed cake you wish.
