Just in time for the July 4th holiday! Bursting with juicy peaches and topped with a golden, buttery crust, it’s an easy and delicious way to enjoy fresh fruit. Whether you're hosting a BBQ or just craving something sweet, this classic treat will surely impress.

INGREDIENTS

  • 2 pre-made pie crusts
  • 4-6 cans of peaches
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ stick butter (melted)
  • Zest of one fresh lemon
  • Cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water)

DIRECTIONS

  1. First things first, preheat your oven to 350°F (175°C). This way, it’ll be nice and hot when we’re ready to bake our cobbler.
  2. In a large mixing bowl, combine the drained peaches, brown sugar, white sugar, vanilla extract, ground cinnamon, ground nutmeg, and lemon zest. Mix gently until the peaches are well-coated with the sugar and spices. This is where all the flavor magic happens, so don’t rush this step!
  3. Pour the cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) into the peach mixture. Stir until the slurry is fully incorporated. This will help thicken the filling as it bakes, ensuring that every bite is perfectly gooey and delicious.
  4. Roll out one pie crust and place it at the bottom of a baking dish, ensuring it covers the entire base and up the sides a bit. Bake the bottom crust in the preheated oven for 10-12 minutes, until it is slightly golden. This will help prevent a soggy bottom crust and give your cobbler that perfect texture.
  5. Pour the peach filling over the pre-baked pie crust, spreading it evenly. Cut the second pie crust into strips or shapes and place them over the peach filling in a lattice pattern or any design you prefer. This is your chance to get creative, so have fun with it!
  6. Drizzle the melted butter over the top crust. This will give the crust a beautiful golden color and add a rich, buttery flavor to every bite.
  7. Place the assembled cobbler in the oven and bake for 40-45 minutes, or until the top crust is golden brown and the filling is bubbling. Your kitchen will smell absolutely amazing at this point!
