Making a velvety Orange Loaf cake that melts in your mouth.
INGREDIENTS
- 1 1/2 cup sugar (300g)
- 2 tablespoons orange zest
- 3/4 cup softened butter (170g) unsalted
- 3 tbsps clear oil (45ml)
- 3 large eggs
- 1/4 cup fresh orange juice (60ml)
- 1 tsp vanilla extract (5ml)
- 2 and 1/4 cup all purpose flour (280g)
- 1 tbsp baking powder (10g)
- 1 tsp salt (5g)
- 1/2 cup whole milk (125ml)
ORANGE GLAZE:
- 1/2 cup icing or powdered sugar (75g)
- 3 tbsps orange juice
NOTE: All ingredients must be in room temperature
DIRECTIONS
- Preheat oven at (160ºC/320ºF-Convection oven) OR (170ºC/340ºF for conventional oven). In a bowl, mix and rub together sugar and orange zest to infuse the aromatic orange oil. Add softened butter and oil, beat until light and fluffy or pale yellow.
- Add eggs one at a time, mixing after every addition. When its fluffy add orange juice and mix.
- Sift in flour, baking powder and salt. Mix until no traces of flour. Add milk and use whisk to mix just until smooth. Do not over mix. Scrape sides and bottom.
- Line an 8x3x3 inches loaf pan with parchment paper. Place the batter, spread evenly and tap to release excess bubbles.
- Bake in a preheated oven for 40 to 50 minutes or until toothpick comes out clean when inserted. See oven temperature specs on top.
- Remove parchment paper and let it cool down completely on a rack.
- Prepare orange glaze: Mix together icing sugar and orange juice. And glaze that beauty!
