These super quick and easy summertime cookies combine the smoothness and mild nuttiness of olive oil with the bright flavors of fresh lemon. No mixer required!

INGREDIENTS

  • 1 egg
  • ¾ cup sugar
  • ⅓ cup olive oil
  • 1 lemon, zested and juiced (about 4 tbsp)
  • ½ teaspoon baking soda
  • 2 cups of all-purpose flour

DIRECTIONS

  1. Mix together one egg, sugar, olive oil, and the zest and juice of one lemon.
  2. Add baking soda and mix.
  3. Stir in flour with a spatula or wooden spoon until a dough is formed.
  4. Chill the dough in the refrigerator for at least an hour.
  5. Scoop the dough onto a baking tray lined with parchment or a silicone baking mat.
  6. Bake at 350°F for 12-13 minutes.
  7. Allow to cool on the tray for a few minutes before removing to a wire baking rack.
