These super quick and easy summertime cookies combine the smoothness and mild nuttiness of olive oil with the bright flavors of fresh lemon. No mixer required!
INGREDIENTS
- 1 egg
- ¾ cup sugar
- ⅓ cup olive oil
- 1 lemon, zested and juiced (about 4 tbsp)
- ½ teaspoon baking soda
- 2 cups of all-purpose flour
DIRECTIONS
- Mix together one egg, sugar, olive oil, and the zest and juice of one lemon.
- Add baking soda and mix.
- Stir in flour with a spatula or wooden spoon until a dough is formed.
- Chill the dough in the refrigerator for at least an hour.
- Scoop the dough onto a baking tray lined with parchment or a silicone baking mat.
- Bake at 350°F for 12-13 minutes.
- Allow to cool on the tray for a few minutes before removing to a wire baking rack.
