Dressed chips, loaded fries, or whatever they are called where you come from, are a fascinating subject. Cheap and filling, they were once associated with poverty. French fries and gravy were the filling for the “poor boy” baguette sandwiches served to hungry strikers during a 1929 New Orleans street car strike. But dressed chips, in their many versions, have gone on to become a proper side dish.

INGREDIENTS

  • Basic Chilli Con Carne Recipe (see below)
  • Tomato Ketchup (8 oz)
  • Mayonnaise (8 oz)
  • Worcester Sauce (Dash)
  • Grated Cheese (4 oz)
  • 3 Baking Potatoes
  • Oil (to roast)

DIRECTIONS

  1. Start by making the Pink Sauce. Simply mix together the Ketchup, Mayonnaise and a few dashes of Worcester Sauce then set aside.
  2. Meanwhile, prepare the Chilli by using the Chilli Con Carne Recipe (fry up the ingredients, leaving to simmer then rest).
  3. Whilst the Chilli is simmering, prepare the Chips by heating some Oil in an oven tray on 425F, and chopping the Potatoes into Wedges.
  4. Once the Oil is heated, carefully toss the Wedges in the oven tray and cook for 30-40 minutes (stirring occasionally).
  5. Once the Chilli and Wedges are cooked, serve by layering the ingredients. Starting with the Potato Wedges, Chilli Con Carne, Pink Sauce, then a sprinkling of grated Cheese - Voila - Taco Fries!

NOTE

  • This is more of a Gourmet version so if you're not a fan of Wedges then just cut your potatoes into the shape of standard fries.  Cook for 20 minutes, flip and cook another 15 - 20 minutes.  Depending on how big you make them they may be done sooner.  Keep an eye on them.
  • You could also cheat and just buy frozen fries.  Follow the directions on the bag for cooking.

 

Taco Fries Recipe

Chili Con Carne

INGREDIENTS

  • 2 pounds ground beef
  • 1 Onion
  • 2 Garlic cloves
  • 1 tsp Chilli Powder
  • 1 tsp Cumin
  • 1 tbsp Oregano
  • 1 tsp Cinnamon
  • 1 Tin Chopped Tomatoes
  • 2 tbsp Tomato Puree
  • 1 Tin Kidney Beans
  • 1 Beef Stock Cube
  • Olive Oil (to fry)
  • Salt & Pepper

DIRECTIONS

 

  1. Peel and finely chop the Onion and Garlic then fry with a little Oil for 5 minutes in a large casserole dish.
  2. Now add the Chilli Powder, Cumin, Cinnamon and Minced Beef - frying until the Minced Beef has browned.
  3. Then stir in the Chopped Tomatoes, Tomato Puree, Oregano, Stock Cube and some seasoning.
  4. Top the chilli up with some boiling water and leave to simmer with the lid on for 20 minutes.
  5. After 20 minutes, drain and wash the Kidney Beans then stir into the chilli. Leave to simmer for a further 10 minutes with the lid off.
  6. After 10 minutes, remove from the heat, place the lid on and leave to rest for 15 minutes. Then the chilli con carne is ready to serve.
