Succotash is a vegetable dish consisting primarily of sweet corn with lima beans or other shell beans.

Other ingredients may be added, such as onions, potatoes, turnips, tomatoes, bell peppers, corned beef, salt pork, or okra. Combining a grain with a legume provides a dish that is high in all essential amino acids.

You might recognize the phrase "Sufferin Succotash" from the cartoon Sylvester and Tweety. 

Well, it actually is a dish you may eat as a meal or holiday dinner.  Here are some standard variations.

INGREDIENTS

  • 4 ears corn (3 cups)
  • ½ of a red pepper, ¼ inch diced
  • 1 can butter beans + 2 tbsp bean liquid 
  • 3 tbsp butter
  • 1 onion, finely diced
  • 1 tsp kosher salt
  • 2 cloves garlic, pressed
  • pinch cayenne pepper
  • 2 tsp lemon juice
  • "a little" parsley (2-3tbsp)

 

Here is another variation.  Also super simple but with a bit extra flair.

INGREDIENTS

  • 1 tbsp olive oil
  • 1/2 tbsp butter
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeno or other small hot chili pepper, sliced
  • 1/2 red bell pepper, diced
  • 1/2 cup diced tomatoes
  • 4 oz green beans, cut in 1/2-inch pieces
  • 1 1/2 cups fresh or frozen corn
  • 1 cup frozen baby lima beans, thawed
  • 2 green zucchini, cubed
  • 1/2 tsp ground cumin
  • pinch of cayenne
