Just a few ingredients to make this absolutely delicious side dish that compliments so many meals – butternut squash, olive oil, garlic, salt and pepper. These simple ingredients allow the butternut squash to really shine. Simple never tasted so good.
INGREDIENTS
- 1 large butternut squash (about 3 pounds)
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1 teaspoon salt
- 1 teaspoon black pepper
DIRECTIONS
- Preheat oven to 400 degrees F.
- Place cut butternut squash in a large bowl, drizzle with olive oil, add minced garlic, salt and pepper and mix well, making sure to coat each piece. Pour squash in roasting pan or baking sheet in a single layer.
- Place on middle rack of oven and roast for 25 to 30 minutes, turning one time halfway through roasting -roast until tender and squash is lightly browned. Enjoy!
NOTES
- Depending on your oven you may need to roast up to 50 minutes.
- You could also buy pre-cut butternut squash if you're short on time.
- Use a fork to prick holes in the skin of the butternut squash. Microwave for 3 minutes on high, then let cool until you can easily handle.
FLAVOR VARIATIONS
- Brown Sugar Roasted Butternut Squash: toss cubed squash with 3 tablespoons melted butter, 3 tablespoons brown sugar, and 1/4 teaspoon salt
- Maple Roasted Butternut Squash: toss cubed squash with 1 tablespoon olive oil, 3 tablespoons maple syrup, and 1/4 teaspoon salt
- Rosemary Roasted Butternut Squash: add 2 tablespoons minced fresh rosemary to this recipe, or 2 teaspoons dried
