Glazed Lemon Cookies
Glazed Lemon Cookies are tender, soft, sweet, tart, bright and perfectly lemony. A quick and easy recipe. They're like bites of sunshine!

INGREDIENTS

  • 3/4 cup unsalted butter, room temperature
  • 1 1/4 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • lemon zest from 2 lemons
  • 2 1/4 cups all purpose flour
  • 1 Tbs cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Glaze

  • 1 cup powdered sugar
  • 2 Tbs lemon juice
  • 2 tsp lemon zest

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Using a stand mixer with the paddle attachment, cream together butter and sugar until light and fluffy, about 3 minutes.
  3. Slowly add egg, egg yolk, vanilla and zest and mix on low, scraping bowl as needed.
  4. In a separate bowl, combine the flour, cornstarch, baking soda and salt. Mix until combined, then add the flour mixture to the butter mixture and mix on low until JUST mixed.
  5. Using a spoon or a small ice cram scoop, scoop 1 inch balls and place them onto a parchment lined baking sheet, about 3 inches apart. Lightly flatten with your hand.
  6. Bake for 9-11 minutes, until slightly golden on the edges. Let cool on the baking sheet for 2 minutes, then transfer to wire baking rack.
  7. For the glaze, mix all ingredients in a small bowl, then drizzle over cooled cookies. Let glaze set at room temperature before storing.
