A popular Filipino noodle dish that is delicious in every bite. Similar to Chinese chow mein, has less vegetables, and uses fine rice noodles, sometimes called rice vermicelli. Generally pork or chicken is used but this recipe has shrimp.
INGREDIENTS
- 1/2 lb rice vermicelli noodles, soaked for about 1/2 hour, drained and cut into 6-8" pieces
- 1 lb shrimp, shelled and deveined
- 1/2 tsp salt
- 2 tbsp oil, separated
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- 1/2 small onion, sliced
- 2 cups cabbage, shredded
- 1 carrot, julienned
- 1 cup broth
- 1/4 cup oyster sauce
- Salt and pepper to taste
- 3 stalks green onion, sliced
DIRECTIONS
- Heat wok, then add 1 tbsp oil.
- Saute shrimp with 1/2 t salt. Set aside.
- Heat wok again and add 1 tbsp oil.
- Saute garlic, ginger and onions.
- Saute carrots and cabbage and add 1 tbsp soy sauce. Set aside.
- In same wok, add 1 cup broth, 1/4 cup oyster sauce and bring to a boil.
- Add noodles and cook till most of the broth evaporates.
- Add vegetables and shrimp.
- Add salt and pepper to taste.
- Garnish with green onions.
