INGREDIENTS
- 1 onion, chopped 2 garlic cloves, minced 1 tbsp ginger, grated
- 2 tbsp extra virgin olive oil or vegetable oil or coconut oil
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/8 - 1/3 tsp cayenne pepper
- 1 can /400g chickpeas, drained
- 1/3 cup / 70g tomato purée
- 1/2 cup water ( or more if necessary)
- 1/2 cup / 115g coconut milk
- 2 cups / 60g baby spinach
- 1 tsp salt or to taste
