Creamy Tomato Bisque
Bisque is a smooth, creamy, highly seasoned soup of French origin, classically based on a strained broth of crustaceans. It can be made from lobster, langoustine, crab, shrimp, or crayfish. The French bisque is one of the most popular seafood soups around the world.

Ingredients for 6 Portions:

  • 1 tbsp olive oil
  • 1 cup diced onion
  • 1/2 cup diced celery
  • 3 cloves garlic
  • 1 quart chicken broth, plus more as needed
  • 1 (28-oz) can crushed San Marzano tomatoes, or about 3 1/2 cups of other crushed tomatoes
  • 1/2 tsp paprika
  • 3 tbsp white long grain rice
  • 1/2 cup heavy cream
  • 1 or 2 tsp sugar, or to taste
  • salt and pepper to taste
  • cayenne to taste
  • basil to garnish
