So easy to make and packed with flavor. This will become a new favorite.

INGREDIENTS

  • 16 oz (1 lb) thin spaghetti
  • 2 tbsp butter 
  • heavy drizzle of oil
  • 1 large yellow onion, sliced 
  • 2 tbsp minced garlic 
  • 2 tbsp chili crunch (optional, spicy)
  • 1/2-2 cups heavy cream 
  • 1/3 cup freshly shredded parmesan 
  • oregano 
  • salt + pepper 

For Topping 

  • freshly grated parmesan 
  • freshly chopped parsley 
  • chili crunch 

DIRECTIONS

  1. boil noodles until cooked in salted water; strain, drizzle & toss in olive oil to avoid noodles sticking together, then set aside 
  2. to a pan over medium heat, add butter & oil 
  3. once butter is melted add sliced onions; stir until all onions are covered in butter/oil 
  4. stir in a pinch of salt to help onions caramelize
  5. let onions cook for about 30-35 mins or until fully caramelized, stirring occasionally 
  6. stir in garlic & let cook until fragrant; once fragrant, stir in chili crunch 
  7. stir in heavy cream; let simmer until sauce thickens, stirring occasionally 
  8. once sauce thicken stir in oregano, salt & pepper 
  9. stir in Parmesan cheese then cooked pasta 
  10. stir until noodles are fully coated in sauce 
  11. serve topped with more parm, chopped parsley & chili crunch
