So easy to make and packed with flavor. This will become a new favorite.
INGREDIENTS
- 16 oz (1 lb) thin spaghetti
- 2 tbsp butter
- heavy drizzle of oil
- 1 large yellow onion, sliced
- 2 tbsp minced garlic
- 2 tbsp chili crunch (optional, spicy)
- 1/2-2 cups heavy cream
- 1/3 cup freshly shredded parmesan
- oregano
- salt + pepper
For Topping
- freshly grated parmesan
- freshly chopped parsley
- chili crunch
DIRECTIONS
- boil noodles until cooked in salted water; strain, drizzle & toss in olive oil to avoid noodles sticking together, then set aside
- to a pan over medium heat, add butter & oil
- once butter is melted add sliced onions; stir until all onions are covered in butter/oil
- stir in a pinch of salt to help onions caramelize
- let onions cook for about 30-35 mins or until fully caramelized, stirring occasionally
- stir in garlic & let cook until fragrant; once fragrant, stir in chili crunch
- stir in heavy cream; let simmer until sauce thickens, stirring occasionally
- once sauce thicken stir in oregano, salt & pepper
- stir in Parmesan cheese then cooked pasta
- stir until noodles are fully coated in sauce
- serve topped with more parm, chopped parsley & chili crunch
