Benihana Yum Yum Sauce
Also known as shrimp sauce, Japanese steakhouse white sauce, pink sauce, hibachi sauce There are as many names as there are recipes online for this elusive sauce! Yum Yum Sauce is a creamy, mayonnaise-based sauce, often described as pale orange-pink, that's popular in Japanese steakhouses, particularly those with hibachi grills.

INGREDIENTS

  • 2 tablespoon (28 gram) unsalted butter 
  • ½ cup (105 gram) Hellman’s mayonnaise 
  • ¼ cup (60 ml) heavy whipping cream 
  • 2 teaspoon (12 gram) ketchup 
  • 2 teaspoon (9 gram) white sugar 
  • ¼ teaspoon (1 gram) kosher salt 
  • ¼ teaspoon (½ gram) garlic powder 
  • 2 pinches sweet paprika 
  • 1 pinch coarse ground black pepper 

DIRECTIONS

  1. Mix together mayonnaise, whipping cream and ketchup, set aside 
  2. Mix together spices, set aside 
  3. Melt butter in bowl of double boiler 
  4. After butter has melted, add mayonnaise, cream and ketchup mixture and spices to double boiler 
  5. Whisk until everything is thoroughly mixed and homogenous 
  6. Transfer Yum Yum sauce to container and cool to room temperature, then refrigerate for several hours, or preferably, overnight before serving.

  • ¼ cup (60 ml) heavy whipping cream 
  • 2 teaspoon (12 gram) ketchup 
  • 2 teaspoon (9 gram) white sugar 
  • ¼ teaspoon (1 gram) kosher salt 
  • ¼ teaspoon (½ gram) garlic powder 
  • ½ teaspoon (1 gram) dry mustard powder 
  • ¼ teaspoon (½ gram) white pepper 
  • ¼ teaspoon (½ gram) onion powder 
  • 2 pinches sweet paprika 
  • 1 pinch coarse ground black pepper
