Atlantic Beach Pie is a simple dessert from North Carolina, known for its salty-sweet flavor profile, featuring a saltine cracker crust, a tangy lemon-lime custard filling made with sweetened condensed milk, and a topping of whipped cream, often with a sprinkle of sea salt.
INGREDIENTS
Crust
- 28–30 saltine crackers, crushed
- 4½ tbsp melted butter
- 2 tbsp sugar
Filling
- 1 can (14 oz) sweetened condensed milk
- 150 g Greek yogurt
- 1 egg yolk
- Juice of 2 limes
- Juice of 1 lemon
- 1 tsp Vanillin
- Zest of 1 lime and 1 lemon
- Preheat oven to 350F.
- Mix crust ingredients together well. Spread in pie dish and pat down to make a crust.
- Bake crust at 350°F for 10 minutes.
- Take out crust and set aside to cool.
- While the crust is cooling; mix filling ingredients together. You an use a spoon or fork. No neeed to dirty up a mixer.
- Add filling to crust and bake for 12–15 minutes.
- Chill before serving.
