Atlantic Beach Pie
Atlantic Beach Pie is a simple dessert from North Carolina, known for its salty-sweet flavor profile, featuring a saltine cracker crust, a tangy lemon-lime custard filling made with sweetened condensed milk, and a topping of whipped cream, often with a sprinkle of sea salt.

INGREDIENTS

Crust

  • 28–30 saltine crackers, crushed
  • 4½ tbsp melted butter
  • 2 tbsp sugar

Filling

  • 1 can (14 oz) sweetened condensed milk
  • 150 g Greek yogurt
  • 1 egg yolk
  • Juice of 2 limes
  • Juice of 1 lemon
  • 1 tsp Vanillin
  • Zest of 1 lime and 1 lemon
  1. Preheat oven to 350F.
  2. Mix crust ingredients together well. Spread in pie dish and pat down to make a crust.
  3. Bake crust at 350°F for 10 minutes.
  4. Take out crust and set aside to cool.
  5. While the crust is cooling; mix filling ingredients together.  You an use a spoon or fork.  No neeed to dirty up a mixer.
  6. Add filling to crust and bake for 12–15 minutes.
  7. Chill before serving.
