Air Fryer Chicken Bites

INGREDIENTS

  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 Tablespoon olive oil
  • 1 ½ teaspoons cajun seasoning (I like Slap Ya Mama seasoning or Tony Chachere's)
  • 1 teaspoon granulated sugar (optional)
  • ½ teaspoon kosher salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon poultry seasoning
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried parsley flakes

DIRECTIONS

  1. Preheat a 5-quart air fryer to 380°F for 5 minutes.
  2. Cut chicken breasts into 1-inch bite-sized pieces and place them into a medium-sized bowl. Add olive oil to the bowl and stir to coat the chicken in the oil. 
  3. Add seasoning and stir so the chicken is coated in the spices.
  4. Spray the air fryer basket with olive oil nonstick spray. Add the chicken pieces to the basket in a single layer (you may need to do this in batches so you don't overcrowd the air fryer).
  5. Cook for 7-11 minutes, shaking the basket around every few minutes for even cooking (or you can flip them around using tongs). The chicken bites are done when an internal temperature reaches at least 165°F. Serve immediately.

NOTE: It really shouldn't matter but my air fryer has two shelves.  I put the chicken bites on both shelves and it took 11 minutes at 400°F.
