Air Fryer Breakfast Potatoes (Home Fries)
These crispy seasoned air fryer breakfast potatoes feature a "secret" ingredient for extra flavorful home fries! Delicious, fast to make, and lighter on oil. This easy recipe is always a hit at the breakfast table.

INGREDIENTS

  • 1½ lb potatoes (Yukon Gold or Russet)
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp dijon mustard (or grainy mustard)
  • 1½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp fine sea salt
  • ½ tsp black pepper

DIRECTIONS

  1. Prep potatoes: Dice potatoes into ½-inch cubes (1.3 cm). Add potatoes to a large bowl. Drizzle with the olive oil and toss until well coated.
  2. Season: Add dijon mustard, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly mixed.
  3. Bake: Spread seasoned potatoes into a single layer in an air fryer basket. Bake in an air fryer (no need to preheat) at 400°F (200°C), until golden brown, about 20 minutes, shaking the basket halfway through. (Cooking time varies based on the size of the potatoes).
  4. Serve: Taste and season with more salt and pepper if needed. Serve hot, with sauce, if desired.

 

Here is a similar variation but with larger pieces.

INGREDIENTS

  • 5 small/medium russet potatoes
  • 2 TBSP Olive Oil
  • Salt Pepper, Garlic Powder, Paprika

DIRECTIONS

  1. Scrub potatoes and chop into smaller pieces. You can peel them if you would like, but I kind of like them with the peel still on.
  2. Add chopped potatoes to a bowl.
  3. Add olive oil, salt, pepper, garlic powder, and paprika on top of potatoes. I don't use exact measurements for the seasonings. Add as much as you'd like, but make sure you add enough to coat the potatoes.
  4. Pour potatoes into an air fryer. Cook at 400 degrees for 20-30 minutes.
  5. Serve with ketchup or your favorite dipping sauce and enjoy!
