Easy, flavorful jalapeño chicken simmered with onions, garlic, and peppers—perfectly spicy, comforting, and ready to wow your taste buds!
INGREDIENTS
- 2 lbs chicken breast or thighs cut in bite size pieces
- 2 tsp salt
- 1 tsp black pepper
- 6 tbsp corn starch; divided
- 6 tbsp dark brown sugar
- 6 tbsp low sodium soy sauce
- 1 pickled jalapeño finely chopped with 6 tbsp pickled jalapeño juice
- 1-3 jalapeño; cut into rounds
- 1/2 white onion; cut into strips
- 4 minced garlic cloves
DIRECTIONS
- Cut up the chicken into chunks.
- Toss/coat the chicken in the salt, pepper and 5 tablespoons of cornstarch. Set aside.
- In a bowl, make your sauce. Combine the brown sugar, pickled jalapeno and juice, soy sauce. Mix well. Add remaining cornstarch. Mix well again.
- Heat up a pan with oil. Once the oil is hot you're going to saute your chicken chunks.
- Once the chicken is all cooked you will set it aside.
- Using the same pan saute the jalapenos and onion.
- After a couple minutes add the minced garlic and saute for about 30 seconds.
- Mix up the sauce mixture again and pour over the top of the vegetables as they continue to cook. As it starts to simmer you'll notice the sauce thicken up.
- Once the sauce has started to thicken you can add the chicken.
- Turn the heat down to Low and continue to mix together the chicken, vegetables and sauce.
- Once the vegetables are tender it is ready to serve!
