Pumpkin Quick Bread
Kicking up the Pillbury Quick Pumpkin Bread mix with a few simple ingredients. You don't always have to start from scratch!


  • Pumpkin Bread Box/Pouch Mix
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 1/2 tsp baking soda
  • 1/2 tsp pumpkin pie spice
  • 1/2 cup water


  1. Preheat oven to 350. Spray bottoms pans, bottoms only. Set aside.
  2. In a medium mixing bowl, combine boxed mix, pumpkin puree, eggs, baking soda, pumpkin pie spice, and water. Stir to combine. Do not over mix.
  3. Pour batter into three mini loaf pans (or muffins, or one loaf pan)
  4. Follow box directions for baking time. Mini loaf pans took 25-30 minutes.
  5. Remove from oven and cool. Enjoy!


  • Disregard ingredients section on the box mix. Use these ingredients instead and then follow box directions for baking.
