One-Pan Chicken, Carrots, and Potatoes (Less Than 1 Hour)
This easy Sheet Pan Chicken Dinner is about to become your new go-to for busy evenings. It’s a complete, satisfying, and delicious meal and it only takes about 10 minutes of prep.

Method

  1. To start off, get your oven preheating to 375° and dice up your potatoes. 
  2. Pat the chicken thighs dry with paper towels, place them on a sheet pan, and drizzle with oil. 
  3. Now, combine all your spices in a small bowl and sprinkle about half of the spice mixture over the chicken, being sure to coat the underside too. 
  4. Toss the remaining spices into the diced potatoes and give them a good stir before adding them to the sheet pan with your chicken. Pop the pan in the oven and set your timer for 25 minutes.
  5. While that is cooking, get those carrots prepped! We like to take the easy way out by buying our carrots already cut so we don’t have to fuss with peeling and chopping. You can dump them directly from the bag into the bowl you used for the potatoes. Drizzle with oil and season with salt and pepper and they are ready to go.
  6. Once the time is up, you can pull the pan from the oven, give the potatoes a toss and add the carrots. Then, everything goes back in for another 25-35 minutes, or until the chicken is cooked through and the veggies are nice and tender. 
  7. Serve it up and enjoy!
