One Minute Microwave Cheesecake
Here is a delicious 1 minute microwave cheesecake that is Keto friendly. It is Low carb, Sugar free and Gluten free.

INGREDIENTS

  • 140g (5oz) Philadelphia Cream Cheese (room temp)
  • 1 Large Egg  (room temp)
  • 1/2 Tsp. Vanilla Extract
  • 2 Tbsp Powdered Sweetner (must be powdered granules wont work as good)

INSTRUCTIONS

  1. Mix egg and cream cheese.
  2. Once mixed add Vanilla extract and sweeter and mix again.
  3. Put mixture in buttered ramekin and microwave 30 seconds.
  4. Repeat in 10 second intervals till the edges are set but the center is still jiggling. 
  5. Chill in fridge 1hr.

Enjoy

TIPS

  • Add A drop (or so) of lemon (makes it more authentic)
  • Beat the cream cheese before adding the egg.  Mixes easier and you won't get any clumps.
  • If you feel the cream cheese is too thick you could add a tablespoon of dark rum.
