Fufu is a West African dish of mashed or pounded starchy root vegetables that's often eaten with soups or stews.
INGREDIENTS
- 4 big potatoes
- 2 tbsp potato starch
- water
DIRECTIONS
- Peel and dice the potatoes.
- Boil the potato until a fork easily pierces. Just as you would for mashed potato.
- While the potatoes are still hot mash up or blend until super smooth.
- In a separate bowl combine 2 tablespoons of potato starch with just enough water to dissolve.
- Add this to the mashed potatoes.
- Stir to combine. Stir constantly and steadily for 3 to 5 minutes until smooth and stretchy.
- Divide into several servings and wrap separately in plastic wrap to keep them hot and from forming a hard outer layer.
- Each person can unwrap their fufu when ready to eat. It should still be warm and perfectly smooth.
