Seasoned and seared Ribs and Rice is a flavorful one-potmeal made with tender, seasoned pork ribs and perfectly cooked rice. It’s ahearty, comforting dish that delivers big flavor with minimal ingredients.
INGREDIENTS
- 3 pounds Ribs Spare or Country
- 4 tablespoon Bacon Grease or Lard
- 1- 14.5 oz can Beef Broth
- 2 ¼ cups Water
- 1 teaspoon Liquid Smoke
- 2 teaspoon Salt
- 1 teaspoon Season Salt
- ½ teaspoon + ½ teaspoon Black Pepper
- 1 teaspoon Onion Powder
- 1 teaspoon Smoked Paprika
- ¼ teaspoon Red Pepper Flakes
- 2 cup Rice uncooked
DIRECTIONS
- Season ribs with season salt and black pepper.
- Heat lard or bacon grease over medium heat.
- Sear ribs on all sides. Set aside.
- Add beef broth, water, liquid smoke, salt, onion powder, garlic powder, black pepper, and red chili flakes. Stir to deglaze the bottom of the pot
- Add ribs to broth. Reduce the heat to low and cover the pot. Let ribs cook for 2 or 3 hours until tender.
- Remove ribs from the both and let ribs cool completely.
- Once ribs are cooled, remove ribs from the bone.
- Adjust seasoning for the broth and bring to a boil, then add rice and rib meat
- Reduce heat to low cover and cook for 18 to 20 minutes.
- Stir rice during the first 10 mins of cooking to ensure it's not sticking to the bottom of the pan. Cover the pot and finish cooking for the remaining time.
- Remove from heat and let it rest covered for 10 mins.
