How to make Tzatziki
Tzatziki is a dip, soup, or sauce found in the cuisines of Southeast Europe and the Middle East. It is made of salted strained yogurt or diluted yogurt mixed with cucumbers, garlic, salt, olive oil, sometimes with vinegar or lemon juice, and herbs such as dill, mint, parsley and thyme.

There are so many uses for Tzatziki sauce (also known as tarator or cacık) and it is super simple to make.  Taking only 15 minutes you'll fall in love.  What types of things can you use it for?

Grilled Vegetables

  • Bell peppers
  • Mushrooms
  • Carrots
  • Asparagus
  • Green beans
  • Corn on the cob

Appetizer Spreads

  • Toasted pita wedges
  • Crisp raw vegetables
  • Olives
  • Cheese and crackers
  • Hummus
  • Zhoug or Shatta (Middle-Eastern hot sauces)

Falafel, Sandwiches and Salads

  • Falafel
  • Pita sandwiches (you could use it instead of the avocado in that recipe)
  • Tabbouleh
  • Lentil salad
  • Chickpea salad

Now for the main event!  The recipe!

Ingredients

  • ½ cup finely grated cucumber (no need to peel or seed the cucumber first, grate on the large holes of your box grater)
  • 1 cup thick whole milk Greek yogurt
  • 1 tablespoon lemon juice
  • ½ tablespoon extra-virgin olive oil
  • 1 garlic clovegrated
  • ¼ teaspoon sea salt
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped mintoptional

Instructions

  • Place the cucumber on a towel and gently squeeze out a bit of the excess water.  You can also just squeeze it by the handfuls over the sink.
  • In a medium bowl, combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, dill, and mint, if using. Chill until ready to use.
