"Hot Green" Goes on Anything Bland
"Hot Green" Goes on Anything Bland
This is a great seasoning to throw on anything you might otherwise consider "plain". Kick it up a little!

Here's the volumetric* recipe for "Hot Green"

  • 2 parts freeze dried chives
  • 2 parts freeze dried shallots
  • 2 parts whole green peppercorns
  • 1 part dried minced garlic
  • 1 part green chile flake
  • 1 part kosher salt **

Grind all ingredients together. You may wish to crush the peppercorns and garlic first, since those are much harder than the other items, which crumble to dust easily.

* Why volumetric?

The freeze-dried ingredients are so unbelievable light weight that volumetric is just plain easier. Using a scale might be more precise, but only if you have a really sensitive scale!

** Why salt?

It's definitely optional, but using just 1 part is usually a good idea to prevent clumping and "stretch" the mix a little bit. Salt is much cheaper than spices, and this small amount isn't enough to treat the resulting mix as a one-step seasoning
