This delicious and moist, old-fashioned applesauce cake is baked in a Bundt cake pan, flavored with applesauce, warm spices, raisins, walnuts, and topped with a simple cinnamon glaze.
INGREDIENTS
Cake
- 2 cups self-rising flour*, sifted
- 1 1/2 cups unsweetened applesauce
- 1 1/4 cup granulated sugar
- 1 tsp apple pie spice (or cinnamon)
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Cinnamon Glaze (optional)
- 1/3 cup powdered sugar
- 1/2 tsp cinnamon
- 1/2 tbsp - 1 tbsp milk
DIRECTIONS
- First spray a Bundt cake pan with non-stick cooking spray and preheat your oven to 350 degrees F.
- In a large mixing bowl, combine granulated sugar, melted butter, applesauce, and apple pie spice and whisk together until smooth and combined. Add in eggs and whisk until incorporated.
- Next add in flour in 1/2 cup increments and fold in until only a small amount of flour remains showing. Gently fold in raisins and nuts and stir until just combined, being careful to not over-mix.
- Carefully pour batter into the pan and bake in the oven for 38-42 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool for 10 minutes in the pan on a wire cooling rack, then flip/transfer to the cake plate you will serve it on.
- Allow the cake to cool an additional 20-30 minutes before glazing.
- While cake cools, prepare glaze by whisking together powered sugar, cinnamon, and milk until a smooth, drizzle-consistency has formed.
- If desired, place small strips of parchment paper underneath your cake, and spoon glaze on top. Let it set up for a few minutes before slicing and serving. Enjoy!
