Pinkaso, also known as funkaso, is a fried dumpling made from flour that originated in West Africa. It's a popular snack in the Hausa community of Ghana.

INGREDIENTS

  • 2 cups all purpose flour 
  • 1 tbsp yeast 
  • 1/2 tbsp salt 
  • Scallions 
  • 1 Onion 🧅 
  • 2 scotch bonnet pepper 
  • 1 1/2 cup of water

DIRECTIONS

  1. In a bowl combine the flour, yeast, salt. Set aside.
  2. Cup up your onion, scallions and peppers. Puree the onions, peppers and half the scallions in a blender.
  3. Add the wet ingredients to the dry ingredients and stir it all up.
  4. Gradually add lukewarm water while stirring until it reaches a bread batter type consistency.  Not to thick but not watery either.
  5. Cover the bowl with plastic wrap and put in a warm place for 10-15 minutes.  Until it doubles in size.
  6. While your batter is resting you can turn on your oil to start it heating it up.  Make sure it's not too high to burn.  Needs to be hot enough to cook the outside and inside evenly.
  7. Once the batter is ready; add in the rest of the scallions and mix it up well.
  8. Wet your fingers and pick up small clumps of your batter. Before dropping it into the oil (gently so you don't get burned by splatter) use your thumb and push a hole in the middle. Make sure your fingers/hand is wet.  It'll help the batter not stick to your hand and keeps the hole in place.
  9. Once it is brown on one side you can flip them and brown them up on the other side.
  10. Pull them out as they finish cooking and put them on a rack to drip dry any oil off them.
