These no-bake coconut snowballs are easy to make and freeze wonderfully.
INREDIENTS
- 2 cups coconut flakes
- 1 oz almonds (about 23)
- 2 cups sugar free white chocolate
DIRECTIONS
- Put 1 1/2 cups coconut flakes into a bowl and set aside.
- In another bowl; using the double boiler method melt your chocolate.
- Pour the melted chocolate over the coconut and mix well.
- Cover with plastic wrap and put in the refridgerator or about 10 minutes to cool and stiffen.
- While the mixture is in the refridgerator boil some water.
- Once the water is boiling add your almonds and boil for 3-4 minutes. This will soften up their skin.
- Strain the almonds out and peel off their skins.
- Using a frying pan toast the almonds.
- Once toasted you can put the almonds into a bowl and let them cool.
- Take out your coconut mixture.
- Take enough coconut to make into a small ball. In the center of each ball put an almond. Trying and make it nice and round.
- Using the remaining 1/2 cup of coconut roll each ball to coat the outside.
- For presentation sake you can put each ball into a mini muffin/cupcake wrapper.
