This slow cooker recipe has tender beef, flavorful broth, and delicious noodles. Perfect for a cold day or when you just need a warm, hearty meal.

INGREDIENTS

  • 1 pound ground beef (sirloin recommended, 93/7)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 2-3 large scallions, roughly chopped
  • 3 cloves garlic, minced
  • 1⁄2 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 cups beef stock
  • 2 packs ramen noodles
  • Optional: sesame seeds, additional scallions for topping

DIRECTIONS

  1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain any excess grease if needed.
  2. Transfer the cooked beef to the basin of a 6-quart slow cooker.
  3. Add matchstick carrots, sliced red bell pepper, and chopped scallions to the slow cooker.
  4. In a medium bowl, whisk together minced garlic, low sodium soy sauce, brown sugar, and chicken or beef stock.
  5. Pour the sauce mixture into the slow cooker and stir to combine with the beef and vegetables.
  6. Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
  7. Approximately 30 minutes before serving, add the dry ramen noodles to the slow cooker. Discard the seasoning packets.
  8. Stir the noodles frequently to ensure they are evenly coated and cook evenly.
  9. When the noodles are tender, serve the dish, optionally topping with additional scallions and sesame seeds.
