Egg fried rice is so easy to make and it can be a meal. You may add other vegetables to your liking to make the fried rice your way.
INGREDIENTS
- 3 cups leftover rice (preferably long grain rice), crumbled
- 3 eggs (season with salt and white pepper powder), beaten
- 3 green onions, chopped finely
- 1 carrot, diced
- 1/4 onion, diced
- avocado or vegetable oil
- 1 tbsp light soy sauce
- 1/2 tbsp dark soy sauce
- salt
- white pepper powder or black pepper powder
DIRECTIONS
- Heat the pan to high heat, add oil.
- Scramble the eggs, and then set aside.
- Add more oil, and stir fry onions and carrot for 1 minute.
- Add rice and stir fry for about 1 minute.
- Add eggs back and stir. Cook about another minute.
- Add chopped green onions and mix.
- Optionally, add chicken bouillon to finish. Serve!
