Quick Egg Fried Rice
Egg fried rice is so easy to make and it can be a meal. You may add other vegetables to your liking to make the fried rice your way.

INGREDIENTS

  • 3 cups leftover rice (preferably long grain rice), crumbled
  • 3 eggs (season with salt and white pepper powder), beaten
  • 3 green onions, chopped finely
  • 1 carrot, diced
  • 1/4 onion, diced
  • avocado or vegetable oil
  • 1 tbsp light soy sauce
  • 1/2 tbsp dark soy sauce
  • salt
  • white pepper powder or black pepper powder

DIRECTIONS

  1. Heat the pan to high heat, add oil.
  2. Scramble the eggs, and then set aside.
  3. Add more oil, and stir fry onions and carrot for 1 minute.
  4. Add rice and stir fry for about 1 minute.
  5. Add eggs back and stir. Cook about another minute. 
  6. Add chopped green onions and mix. 
  7. Optionally, add chicken bouillon to finish. Serve!
