Golden Garlic Chicken Fried Rice
Tender chicken, fluffy rice, and plenty of garlic come together for a simple and delicious meal. Better than takeout and easy to make.

INGREDIENTS

  • 10oz boneless chicken thighs
  • 10oz cooked and cooled rice (day-old rice works best)
  • 1.5oz green onions
  • 1/4 red bell pepper
  • 6 cloves garlic
  • 2 eggs, beaten with a pinch of salt

For the Chicken Marinade

  • 1 tsp soy sauce
  • 2 tsp rice wine
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp cornstarch

Mix well and marinate the chicken for about 10 minutes.

DIRECTIONS

  1. Heat a little oil in a pan over medium heat. Add the eggs and cook until just set. Remove and set aside.
  2. Add the chicken and cook until golden brown on both sides.
  3. Add the garlic and stir-fry until fragrant.
  4. Return the eggs to the pan. Add the rice and break up any clumps.
  5. Season with 1/8 tsp salt, freshly ground black pepper to taste, and 1 tsp soy sauce. Stir-fry until evenly combined.
  6. Add the diced red bell pepper and toss to combine.
  7. Add the green onions and cook until fragrant.
  8. Serve and enjoy!
