Easy No-Knead Air Fryer Bread
Bake soft, homemade no-knead bread in your air fryer using just flour, yeast, water and salt. Includes optional herbs and garlic.

If you've always wanted fresh homemade bread without kneading, a stand mixer, or heating up your kitchen, this simple air fryer recipe is a great place to start. With only four basic ingredients, you'll have a crusty loaf with a soft, chewy interior that's perfect for sandwiches, soups, or simply slathered with butter. Customize it with garlic, herbs, cheese, or your favorite seasonings to make it your own.

INGREDIENTS

Bread

  • 1½ cups warm water (about 105–110°F)
  • 2 teaspoons active dry yeast (or instant yeast)
  • 1 teaspoon sugar or honey (optional, helps activate the yeast)
  • 3 cups all-purpose flour
  • 1½ teaspoons salt
  • 1 tablespoon olive oil (optional, for a slightly softer loaf)

Optional Seasonings

Use any combination you like:

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • ½ teaspoon cracked black pepper
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon everything bagel seasoning
  • 1 tablespoon chopped fresh herbs

DIRECTIONS

Step 1 – Activate the Yeast

In a large bowl, combine the warm water, yeast, and optional sugar or honey. Let stand for 5–10 minutes until the mixture becomes foamy.

If using instant yeast, you may skip this step and simply mix everything together.

Step 2 – Mix the Dough

Add the flour, salt, optional olive oil, and any seasonings you're using.

Mix thoroughly with a sturdy spoon or silicone spatula until all of the flour is incorporated. The dough will be sticky, shaggy, and somewhat elastic. This is exactly what you want.

Do not knead.

Step 3 – First Rise

Lightly grease a clean bowl with oil.

Using lightly oiled hands or a spatula, shape the dough into a rough ball and place it into the greased bowl. Cover with plastic wrap, a lid, or a damp towel.

Allow the dough to rise in a warm place for 60–90 minutes, or until nearly doubled in size.

Step 4 – Shape the Dough

Gently turn the dough onto a lightly floured surface.

Fold the edges toward the center a few times to tighten the surface, then shape it into a smooth round loaf.

Again, there's no kneading—just enough folding to create shape.

Step 5 – Second Rise (Optional but Recommended)

Place the shaped dough onto parchment paper and cover loosely.

Let rest for another 20–30 minutes. This creates a lighter, fluffier loaf.

Step 6 – Prepare the Air Fryer

Preheat the air fryer to 320°F for about 3 minutes.

Place the dough (on parchment paper) into the basket.

If your parchment is large, trim it so it doesn't touch the heating element.

Step 7 – Bake

Bake at 320°F for 25–30 minutes.

Carefully flip the loaf over.

Bake another 5–8 minutes until the bottom is golden brown and the loaf sounds hollow when tapped.

If your loaf is browning too quickly, loosely cover it with a small piece of aluminum foil during the last few minutes.

Step 8 – Cool

Transfer the bread to a wire rack and allow it to cool for at least 30 minutes before slicing.

Although it's tempting to cut into it immediately, cooling allows the crumb to finish setting and gives you a much better texture.

STORAGE

  • Store at room temperature in an airtight bag for up to 3 days.
  • Refrigerate for up to 1 week.
  • Freeze whole or sliced for up to 3 months.

  • Everything bagel seasoning sprinkled on top before baking.

Cheddar Herb
Fold 1 cup shredded sharp cheddar into the dough before the first rise.

Rosemary Sea Salt
Brush the top lightly with olive oil before baking and sprinkle with coarse sea salt and rosemary.

TIPS FOR SUCCESS

  • Warm water should feel pleasantly warm, not hot. Water that's too hot can kill the yeast.
  • Sticky dough makes softer bread. Resist adding lots of extra flour.
  • Air fryer temperatures vary, so begin checking around the 25-minute mark.
  • A digital thermometer inserted into the center should read about 200–205°F when the bread is fully baked.
  • Let the loaf cool before slicing for the best texture.
